Something Other Than Eggs for Breakfast
Ok, so let’s get one thing clear here…I DO NOT bake. But sometimes you gotta do what you gotta do to create something for breakfast that is not an egg or a variation of eggs. If I’m sharing this you can guarantee that it will be simple, easy and fast cuz that’s how I roll.
So I found this recipe on a website when I searched for, “healthy banana oatmeal muffin recipe”.

It seemed simple enough, so I gave it a go….making my own tweeks here and there, as I do, and for once I didn’t screw the entire thing up because of it. They are pretty darn tasty!
One thing I would recommend is to use a non-stick muffin pan and spray it with oil instead of muffin cups. These muffins have no oil or butter so they really stuck to the paper forms that I used which makes it a bit of a challenge to eat.
So here is what I did to make these muffins my own:
-I used wildflower honey which has a lovely floral taste for sweetener
-I used almond milk instead of regular milk
-added ¼ cup of shredded, unsweetened coconut flakes
-added ¼ cup of dried cranberries
-added ¼ cup of pumpkin seeds
Even though I added these extra ingredients, the recipe made 12 muffins perfectly. The original recipe says it yields 14 not including the extras so I must be making my muffins a little bigger….but I think they are just the right size.
I added a raspberry on top because I LOVE them, it looks cute and they were on sale for $2.50 a pint for organic so you better believe I bought 4!
If you are looking for something other than eggs to have for a healthy breakfast give these muffins a go! They are simple and tasty and will fill your tummy up until lunch time.
